Justyne McCoy met Dustin Noble at a goat show.  A friend of hers asked if she had met this "nice, young guy" from Nashville. It wasn’t long before this Kansas City girl was helping her cute Nashvillian fill water buckets at the show. "He put me to work right off the bat," she smiles. And so the long-distance courtship began.

Before cell phones and text messages, the couple kept in touch through AOL messenger and email. Justyne decided MTSU would be a great school for her, especially since she knew a "cool guy" that would let her keep her goats at his house in Williamson County.

In 2007, the couple had an opportunity to farm on the land of a family friend’s property. "We moved out to the farm and started the dairy, got married and now here we are," says Dustin.

Noble Springs Dairy produces a variety of fresh and aged goat cheeses, including chevre, feta, Gouda and Harpeth Fleur. To order online go to noble-springs.com.
